I'm looking for a SSH client for the Mac that will be compatibile with Star's SSH menu-style interface. The "Terminal" app doesn't allow for mouse use.

Install OroborOSX or similar (X-Windows manager for OSX), and then download http://www.star-os.com/downloads/PuttyOSX.dmg.zip which is a port of Putty for PPC OSX we've done a while back. (sorry, no intel version).
There is a readme in the Putty archive.
If you run OSX's SSH under an X-Windows terminal, you will have a working mouse as well, but the fonts & colours may be a little off.

Just got my first imac (with leopard OS to boot)
Is this still the recommended SSH client?

You can try it. I have not had a chance to test it on Tiger or Leopard, however if it works, this is still the one to go for. If it doesn't work, please let me know.

The putty download from your server worked great, mouse and all. Didn't have to download anything such as oroborOSX.
I'll try x11 (built into leopard) this evening to SSH into some V3 gear.. I used it to ssh into some other servers, and had a hell of a time pasting text... had to setup the 3rd button on the mouse and go into the x11 preferences and change some stuff around.

Just use this http://iterm.sourceforge.net/
iTerm works perfect with the StarOS ssh interface, mouse clicks, key combos, highlighting, the works! This way you don't have to run some ppc x11 app. It even has clicky urls if you use irssi or something :-)
Once you install you'll want to go to Bookmarks > Manage Profiles > Keyboard Profile and select "Option key as +ESC" for Global (and maybe xterm).

The osx putty has a problem logging into V3. I get a 'putty fatal error' 'expected key exchange reply packet from server'.
Logs into v2 just fine.

If you cancel out of it and log in again it works for me.
It's like just the first time you get the error.

If you install the X package in OSX, ssh works fine with staros. Just make sure to run the X app and ssh from the xterm that comes up with that.

If it is like that, then maybe OSX Putty has a problem after he saves key for exchange. If this is the case, any other logging to the same unit should not have any more problems.
